
Squash blossom season is my favorite season. They're one of my favorite foods. I was first introduced to them in the Greek dish Yemista, where they are filled with rice and herbs, and baked in the oven. When I visit family in Crete, it's my go-to dish. At home, I love filling them with an herby, lemon ricotta mixture, creating a light batter, frying them, and topping with fresh herbs, parmesan, lemon zest, and a drizzle of honey. Served with a glass of chilled wine... absolutely perfect.
