
THIS CORN RISOTTO WAS SO GOOD! 🌽
Made it last year and since summer is upon us, thought I would share.
Full disclosure: I made this dish on a whim and didn't use an exact recipe so the version linked was the closest I could find. Making your own corn broth is so much simpler than you think! I literally threw in some corn cobs, half of a peeled onion (the recipe I linked doesn't say to use an onion but do it) with some parsley, salt, and water and let it simmer for an hour. The corn broth definitely ensures you get that corn flavor.
I also pre-cooked some corn kernels in a pan with heavy cream and butter and then pureed it with basil, boursin cheese, and freshly grated parm. Then I added that creamy mixture to the risotto halfway through to incorporate more of the corn flavor. It was insanely delicious.
